LA Seafood Ingredients:


750 pounds (70-90 count) shrimp, peeled and deveined
450 pounds catfish fillets
100 pounds claw crabmeat
50 pounds white crabmeat
200 pounds diced alligator meat
25 pounds Louisiana crawfish tails
85 pounds oysters



Additional Gumbo Ingredients:


78 pounds vegetable oil
80 pounds flour
200 pounds diced onions
75 pounds diced celery
100 pounds diced green bell peppers
50 pounds minced garlic
100 pounds sausage
150 pounds sliced okra
1,650 pounds hot shellfish stock
20 pounds sliced green onions
10 pounds chopped parsley
salt and cayenne pepper to taste
Baumhower's hot sauce to taste





In the kettle, heat oil over medium-high heat. Mix in flour, stirring constantly until a brown roux is achieved. Add onions, celery, bell peppers and minced garlic. Cook until vegetables are wilted. Blend in sausage and stir to mix well. Stir in okra then add hot shellfish stock, one gallon at a time, stirring constantly to incorporate. Bring mixture to a low boil, reduce heat and allow to simmer. Additional stock may be used to retain volume. Add green onions and parsley. Season to taste using salt, cayenne pepper and Baumhower's hot sauce. Fold in all seafood, return to a low boil and cook until heated through. Adjust seasonings if necessary.
